Recipe Chapter 01: Bergensk Fiskesuppe (Bergen Fish Soup)

SERVES 4 • 40 MINUTES

A silken, sweet-and-sour broth enriched with egg yolks, cream, and vinegar, loaded with seasonal root ribbons and tender fish chunks.

The Ingredients

  • 800 ml good white fish stock or vegetable broth
  • 400 g firm white fish (cod, haddock, or pollock), diced
  • 1 large carrot, cut into paper-thin matchsticks
  • 1/2 small celeriac root, shredded
  • 150 ml heavy whipping cream
  • 2 fresh egg yolks
  • 1.5 tbsp apple cider vinegar or white wine vinegar
  • 1 tsp raw sugar
  • Handful fresh dill and chives, finely chopped

Method of Preparation

  1. Bring the fish stock to a steady simmer in a heavy stockpot. Add shredded carrots and celeriac, cooking until just tender (4 minutes).
  2. In a small bowl, whisk egg yolks together with the cold cream and vinegar until uniform.
  3. Reduce the heat to lowest setting. Ladle a small cup of hot broth slowly into the egg-cream mixture to temper it, then pour everything back into the soup pot, stirring constantly. Do not boil.
  4. Slide the fish chunks into the warm broth. Let them poach gently for 4 to 5 minutes until opaque and flaky.
  5. Stir in sugar, season with salt and white pepper, and scatter chopped dill. Serve immediately with warm crusty bread.

Recipe Chapter 02: Stekt Makrell med Rømme (Pan-Crisped Mackerel)

SERVES 2 • 25 MINUTES

Oily summer mackerel coated in nutty rye flour, pan-seared hard in butter, and balanced by rich sour cream and cold pickled cucumber ribbons.

The Ingredients

  • 4 fresh mackerel fillets, skin on, pin-boned
  • 4 tbsp coarse dark rye flour
  • 1 tsp fine sea salt & 1/2 tsp freshly cracked black pepper
  • 2 tbsp unsalted butter + 1 tbsp neutral cooking oil
  • 1 cucumber, thinly sliced into rounds
  • Quick pickle: 2 tbsp vinegar, 4 tbsp water, 1 tbsp sugar
  • 150 g thick sour cream (rømme or crème fraîche)

Method of Preparation

  1. Whisk vinegar, water, sugar, and salt in a bowl until dissolved. Toss cucumber rounds into the brine; set aside for 15 minutes.
  2. Score the skin of each mackerel fillet lightly with 3 shallow slashes. Dredge both sides in seasoned rye flour, shaking off excess.
  3. Heat oil and butter in a heavy cast-iron skillet over medium-high heat. When the butter foams subside, lay fillets skin-side down.
  4. Press each fillet gently with a spatula for 10 seconds to stop curling. Cook undisturbed for 3 minutes until skin is bronze and crisp.
  5. Flip gently for 60 seconds on the flesh side. Transfer to warm plates alongside drained cucumbers, boiled potatoes, and a spoonful of cold sour cream.
